Ingredients:
- 8oz of rice noodles
- 1 cup of roasted peanuts
- Loads of mixed stir fry veg (beansprouts, cabbage etc.)
- 1/4 cup of lime juice
- 2 1/2 tbsp soy sauce
- 2 1/2 tbsp brown sugar
- 1 tbsp sweet chili sauce
- 1 fresh chili no seeds
- 4 spring onions
- 2 x eggs
- 2 cloves of garlic
- 1 lime to slice
- Follow the instructions on your rice noodles. Most have to be left sitting in boiling water for about 15 mins, some are straight to wok.
- Mix the soy sauce, lime juice, brown sugar & sweet chili sauce in a bowl.
- Cut your spring onions lengthways and then in half. Using some spray oil fry your garlic, chili and spring onions in a pan.
- Once they have softened add in the mixed stir fry veg and cook for about 10 minutes.
- Chop up your peanuts and add them into the pan, fry for another 5-10 minutes.
- Skip this step if you are vegan but add in the 2 eggs, mix together with your vegetables and cook for 5 minutes.
- Add in the rice noodles and the dressing you made earlier with the lime, soy etc.
- Toss everything together and cook until everything is warmed through.
- Serve with a wedge lime.
